Our olive oil is made the same day of its harvest and following a very rigorous process.
From the moment the olives are harvested, until they are crushed once in the oil mill, no more than 6 hours pass, since the time from the harvest is another factor that affects the quality of the oil.
We avoid washing the olives in the oil mill, and we produce the extraction of the olive oil in cold.
Finally the filtering process takes place, to eliminate impurities, obtaining at the end of the process an extra virgin olive oil of very low acidity and extraordinary quality.
